Add the water to your mixing bowl. Don't use water that is too hot.

<br>Slowly mix in portions of the flour until all is added. Knead with your hands and then add the salt.

<br>You may need to add some additional water or flour to get the correcy, flaky consistency.
<br>
<br>Knead the dough for a good 10 minutes, the cover and let rest for a 20 minutes.
<br>
<br>Divide the dough into your 4 portions, roll into balls and dust with flour, cover with a cloth and let rest for another 20 minutes.
<br>
<br>Stretch and roll your dough into a thin oval and it is ready for topping and baking.
