Serving Size, Ingredients and Equipment:

Special equipment: hand blender.

<br>- 1/4 finely chopped small yellow onion
<br>- 2 teaspoons finely chopped small green pepper
<br>- olive oil
<br>- one finely minced toe of garlic
<br>- dried thyme
<br>- dried oregano
<br>- fresh basil leaves
<br>- 1 can whole tomatoes (or fresh skinned tomatoes)
<br>- 1 can tomato puree
<br>- salt & pepper to taste
<br>
<br>A large can of peeled tomatoes in heavy puree will also work well.

Cooking Instructions and Methods:

Blend all of these ingredients together, cold, with a hand mixer, then warm them for about 15 minutes without letting the mixture boil.

<br>Add salt and pepper to taste.
<br>
<br>You can make this sauce in large batches and freeze the rest for awhile. Using too much green pepper will overwhelm the smell and flavor of the sauce.
