Wash and scrape the carrots and trim off the
<br>tops and tails, then cut into 1/3 inch coins.

<br>Barely cover the carrots with water in a pan.
<br>
<br>Add salt and simmer, covered, for 10 minutes.
<br>
<br>When almost tender, uncover and reduce for about 10 more minutes.
<br>
<br>Add the garlic, mint, olive oil and more salt to taste. Perhaps cook for a few more minutes until the desired tenderness is reached and the amount of flavorful liquid is fitting for your purpose.
