Serving Size, Ingredients and Equipment:

- 2 medium pink grapefruit<p><br>- 1/4 cup thinly sliced shallots, soaked in cold water for 10 min. and drained</p><p>- 1 teaspoon dried shrimp powder</p><p>- 1 tbsp toasted chickpea flower</p><p>- 2 tbsp fried shallots</p><p>- 1 teaspoon fish sauce, or to taste</p><p>- 1 teaspoon shallot oil</p><p>- salt to taste</p>

Cooking Instructions and Methods:

Use a sharp knife to filet the grapefruit into pieces while keeping pith and peel out. Squeeze any remaining fruit from the skins into a bowl with the grapefruit.

<br>Transfer the grapefruit to a wide, shallow bowl. Get rid of the juice (use for something else). Add the shallots, shrimp powder, toasted chickpea flower, and fried shallots. Toss. Add the fish sauce and the shallot oil and toss.&nbsp;<p>Taste and add a little more fish sauce and some salt if you wish.</p>
