for eight cookies:
100g chocolate of your choice (you can also add add- ons of your choice, for example caramel)
85g butter
85g white flour
75g sugar
vanilla from one vanilla bean or one teaspoon
18g cocoa powder (optional, for a dark dough)
a pinch of salt
1/2 teaspoon baking powder
First, let the butter soften by taking it out of the refrigerator. Chop the chocolate and/or your add- ons of choice into small chunks. Preheat the oven to 180°C circulating air and prepare a baking tray with baking paper. Whisk together in a bowl: the flour, the baking powder, the cocoa powder (optional) and the salt. In a second bowl, combine the butter, the sugar and the vanilla and mix with your hands or an electric whisk. Then add the flour mixture to the butter mixture and make sure everything is evenly mixed. Try not to add any liquid because it would change the consistency of the dough. Last, add the chocolate or your other add- ons of choice to the dough and mix it in well. In order to form the cookies, divide your dough into eight equal balls. Then press the balls onto the prepared baking tray with enough room between them. After that, their shape should be more oval than round. Bake the cookies for nine minutes. After baking, the cookies are very soft. let them cool down and take them off after that to avoid them breaking.
