Mom's Potato Soup

Serving Size, Ingredients and Equipment:

For 4 portions:

- 6 medium potatoes, diced
- 2 large onions
- 1 cup celery (onions and celery chopped)
- 3 cups water or, preferably, chicken broth
- 1 Tab. salt
- 1/4 teaspoon pepper
- 3 cups milk
- 1 egg
- flour
- butter
- chopped parsley

Cooking Instructions and Methods:

Bring the first 6 ingredients to a boil together in a pot, turn down the temperature and simmer for 15 to 20 minutes.

The rest of the ingredients are to be added in this way: add 3 cups milk to the above mixture and while that is coming to a boil, stir the egg into flour (one egg and some flour). Mash potatoes in the pot a little, then add flour and egg mixture to the soup. Add 4 Tablespoons of butter, simmer 10 to 15 min. longer. Garnish with some fresh parsley.

Make sure that while you are cooking the soup, it doesn't get burned on the bottom of the pan - stir occasionally. Check before adding the milk to see how thick you want it - maybe add 2 cups, test to see if you like the thickness and then add the other cup if you like. The milk adds great taste as well. Also, the flour mixture is for thickening, just don't get any flour lumps - make sure the egg and the flour are mixed very well before adding to the hot soup.
