Wash and scrape the carrots and trim off the
tops and tails, then cut into 1/3 inch coins.
Barely cover the carrots with water in a pan.
Add salt and simmer, covered, for 10 minutes.
When almost tender, uncover and reduce for about 10 more minutes.
Add the garlic, mint, olive oil and more salt to taste. Perhaps cook for a few more minutes until the desired tenderness is reached and the amount of flavorful liquid is fitting for your purpose.
