Serving Size, Ingredients and Equipment:

For each appetizer portion (one tomato):

- one fresh tomato
- 5 tablespoons olive oil
- 2 tablespoons wine vinegar (for a “lighter” taste) or balsamico vinegar
- 1 tablespoon dark honey
- sea salt
- ground black pepper
- 3 shallots, chopped
- two large basil leaves, ripped apart

Cooking Instructions and Methods:

Make sure the tomato is dry and cut it into relatively think slices.

Mix a vinaigrette out of the remaining ingredients (except the basil and onion). Use the salt and pepper to taste.

Arrange the tomato slices on a chilled plate, top with the vinaigrette and garnish with the basil.

If you prefer, add the ground pepper on top at this stage.

Serve.
