Add the water to your mixing bowl. Don't use water that is too hot.
Slowly mix in portions of the flour until all is added. Knead with your hands and then add the salt.
You may need to add some additional water or flour to get the correcy, flaky consistency.
Knead the dough for a good 10 minutes, the cover and let rest for a 20 minutes.
Divide the dough into your 4 portions, roll into balls and dust with flour, cover with a cloth and let rest for another 20 minutes.
Stretch and roll your dough into a thin oval and it is ready for topping and baking.
