Cassia Bark is often sold as cinnamon. Cassia, however, has a stronger, less dilcate flavour and is therefore used for stronger, spicier dishes than delicate cinnamon.
Cooking Instructions and Methods:
Used in various main dishes requiring a stronger cinnamon flavor, such as Jive Chicken. Cassia is also one of the ingredients in Chinese five-spice & mincemeat spice.
